What’s in my Fridge? : Easy Meal Prep Ideas
As a typical stressed our college student, I don’t have much time to cook. But I do have a secret strategy that helps me eat well during the busiest of weeks. I’ve designated my Sundays as “cooking days” so I prepare all my food for the week by filling my fridge with nutritious staple ingredients. 
What’s in my fridge:
– Spinach
– Sweet Potato Hash (made with coconut oil and cinnamon in a skillet)
– Quinoa and Spinach cakes (purchased from Costco)
– Chopped apples
– Cooked apple and turkey sausage
– Chopped strawberries
– Cooked and chopped chicken
– Pistachios
– Peeled hard-boiled egg
– Celery
– Pesto
– Salted almond dark chocolate
– Steel cut oats (Purchased from whole foods, good quality oats are the best!)
– 2 Oranges
It may seem like a motley collection, but these items are great staples to make endless , delicious combinations!
For example:
Breakfast: Two hard-boiled eggs, oatmeal with cinnamon and fresh strawberries
Lunch: Salad with apples and pistachios, eat a sausage if you are still hungry!
Mid Afternoon snack: Two quinoa cakes
Dinner: Chicken and pesto on a bed of spinach with a side of warm sweet potato hash
We may all be busy people, but we need not compromise food! If you spend the time preparing, it will pay off.

Day 54
For Christmas my boyfriend treated me to a a day of horseback riding in the countryside once I got to London. I used to ride back in high school and didn’t realize how much I missed it until I was back in the saddle today. Galloping through the forest took me back to my barn days when I’d spend hours grooming, riding and hanging out with the horses. The beautiful weather made for a perfect getaway and a chance to see a new, rural side of London. Today will definitely go down as one of my favorite days spent in this magical place.

Let’s go to Paris

For years, I shied away from hats, thinking I needed some fabulous occasion to wear them out. But after investing in this wide-brimmed when I first arrived in London I’ve realized how very very wrong I was. Hats are the perfect staple for every closet. They void a need for accessories and put an unmistakeable flair to your outfit. They’re kind of like stilettos for your head; if you can own ’em, you feel on top of the world

50 days? How has this much time already passed? London already feels like a second home and I can’t believe how much I still want to do with so little time left!
Jossie and I celebrated the sunny day with a nice run in Regents Park. We’ve all been swamped with midterms and papers, so getting some fresh air and watching puppies run around was the perfect medicine.

Lauren’s dad was in town and treated us to a wonderful meal at Dishoom. The food came family style so we had tons of choices to choose from. Between the cheesy naan and tender lamb, it was some of the best indian food I’ve ever had
