Dinner parties are always my favorite occasions to dress for because they’re my chance to try out a new look or test some new shoes I’m too afraid to commit a full day to. In this case, it was a chance to premiere a tanktop without a jacket (crazy I know). But after a long winter of coats and layers, this was a BIG deal for me. Needless to say I was reminded how much I love spring weather. Lucky for me, this is the first dinner occasions of many as my friends and I end our semester abroad and prepare our final hurrahs. I suppose they’re really just more opportunities to play dressup in the city.

Spanish Days

Confession time, I have no idea how to dress for summer. That’s suuuuper embarrassing for a desert rat to admit seeing as warm weather occupies 90% of Arizona’s climate. But after moving to a cold city like London, I realized how much I love tights, coats and scarves. In fact I still found myself reaching for pants and sweaters these last few mornings. In fact, as summer weather approaches, I’ve started venturing to my roommates’ closets for outfit inspiration. You can thank Makenna for this beautiful gypsy gown. It’s flowy fit was the perfect way to wander through London’s Spanish Food Festival. I’m in love, and may never give it back.

Blueberry Hunter Stew

IMG_9092The hardest part about traveling is maintaining a healthy diet. I have a super sensitive stomach so too many sweets (guilty) or heavy foods put me over the edge. Even when I cook my own meals on vacation, I still feel the need to detox once I’m home. I found this (somewhat) raw recipe on Strange Kitty Cooks and was eager to give it a try. I’m not a huge fan of red meat but I was feeling adventurous today. The blueberries were the perfect way to make the dish feel sweet and fresh. Plus any recipe that calls for red wine is okay in my book.

Ingredients:

  • 2 lbs Cubed Lamb
  • 2 Handfuls of Fresh Blueberries
  • 2 Cups Baby Carrots, sliced in half lengthwise
  • Coconut oil for frying
  • Salt, Pepper, Oregano, Garlic
  • 1 Large Onion
  • 1/2 Cup Red wine
  • Splash Worcestershire sauce

Step 1: Brown the beef in coconut oil and put on a medium simmer with onions

Step 2: Add Salt, Pepper, Oregano, Garlic (to taste), Carrots, Wine and a splash of Worcestershire sauce. Add enough water to just cover the beef

Step 3: Let stew for 20 minutes on a medium heat

Step 4: Add berries and let stew for an additional 10 minutes or until carrots are tender

Holland

Jossie and I headed to Amsterdam for a girl’s trip last weekend. I’ve been to the Netherlands before but have always dreamed of returning to see their world renowned tulip fields in bloom. After an exhausting night bus ride we walked around the city and took in the sights. First thing in the morning we went to the Keukenhof Gardens, home of the world’s largest flower collection and tulip fields. Needless to say the gardens were absolutely breathtaking with flowers of all shapes and colors.

We tasted cheese,visited the flower market and even stumbled upon the infamous I Amsterdam sign in the park. I just love the Dutch and their friendly demeanour and lifestyle. The Netherlands have a very diverse mix of people, and it was one of the few places in Europe I never felt like an obvious American traveler.
